Today we are baking a French cookie, and we find it one of the most difficult cookies to make: the macaron. Even though we see all kinds of blogs claiming it is easy to make, it is not as easy as it looks! But we are happy that we succeeded reasonably on our third attempt. Even though our macarons aren't as beautifully smooth and gorgeous in colour as those from the pastry shop, they taste delicious!
How to make French Macarons
Draw 3-4 cm circles on the back of a sheet baking paper.
Sift the almond flour with salt and icing sugar into a bowl.
Do not press through what stays behind in de sieve, but discard it.
Grind the almond flour finely in a food processor (read the recipe).
Set the almond mixture aside for now and whisk the egg whites
Add the egg whites to the mixer, beat them slowly until foamy.
Then mix in vanilla and the half teaspoon of cream of tartar.
Beat the caster sugar spoon by spoon into the egg whites, until well combined.
Then beat the egg whites at high speed into stiff peaks.
Mix in the food colouring using the mixer.
Finally gradually fold in the almond flour mixture.
Fold it in until all is well combined.
Preheat the oven to 140°C
