125g soft butter
100g caster sugar
1 teaspoon vanilla extract
1 organic egg
A pinch of salt
250g cornstarch
Sugar Mice (sprinkles)
Today we are baking mini cornstarch cookies for our little monsters. They are celebrating Ketikoti at school today, and when they come home, we will have cookies with tea or rather cold lemonade, because it is nice and warm today!

Our recipe is traditionally Surinamese in terms of ingredients.
But cutting the cornstarch cookies into shapes is not traditional in Surinam. Usually, the dough balls are flattened with a fork and then baked. We thought: let's have some fun with the biscuits, for the special Ketikoti celebration!

Here is how to make Surinamese Cornstarch Cookies

Preheat the oven to 175°C and place waxed paper on your baking tray
Add butter, sugar and vanilla to a large bowl.
Also add the egg and a pinch of salt to the bowl.
We fetch the handheld mixer, less cleaning up.
Mix until the egg is well incorporated in the butter mixture.
The mixture should be pale and smooth.
Sift the flour into the butter mixture.
Mix the flour briefly into the mixture.
Until you see large crumbs.
Knead it briefly by hand.
Roll the dough into little balls.
Cut out little dough flowers.
 - The cornstarch dough should be soft but not sticky
- If it is sticky just add some cornstarch en knead it in briefly
- Sprinkle some cornstarch over your baking mat and dip in your cutters now and then
Then the cookies will easily come out.
Put the cookies on the tray and sprinkle mice.
Bake the cookies for 12-15 minutes.
The cookies should not colour brown, just on the back of them.
Allow the cookies to cool and then the party can start!
