150 grams finely ground almonds
150 grams caster sugar

To make such a delicious, fun Sinterklaasslof, you traditionally need almond paste. We love tradition, so we make our own almond paste. It sounds very interesting: ooh! we make our own almond paste!!! But it's not a big deal if you have a food processor. If you don't have one, use almond flour instead; that's even faster.

Blending the flavors takes the longest, so we started early. Once the almond paste is ready, put it in the refrigerator for at least overnight, up to four days. The recipe says the longer the better, but do what's convenient for you.

How to make real almond paste

Put the 3 ingredients in the foodprocessor,

Turn it on until the paste is smooth and well blended.

Knead it briefly then divide in 2 pieces.

Form both into cylinders and wrap in cling film.

Place the almond paste in the fridge overnight, up to 4 days.
