A French Diplomat Pudding

is made with Lady fingers and cherries

Shopping list
500 ml whole milk
1 teaspoon vanilla extract
4 organic egg yolks
100g caster sugar
6 gelatin leaves
250 ml whipped cream
optional: 4 tblsp. kirsch or maraschino

2 tablespoons caster sugar
cherries and chocolate shavings

The original French Diplomat Pudding is delicious, but for adults only, if it's made with liqueur. We have mini monsters eating with us, so alcohol isn't an option for us. We make this dessert extra delicious with some extra vanilla, whipped cream, fruit, and chocolate. Whatever you choose, this pudding is truly delicious!

How to make a classic Diplomat Pudding

Fill the pudding mould with cold water and set it aside

Soak the gelatin in cold water.

Bring the milk to a boil.

Add the vanilla to the milk.

Separate the eggs, keep the yolks.

Put the egg whites in a tightly sealable jar and freeze them for later use

Place the egg yolks in a large bowl

Add the sugar to the egg yolks.

Wisk them until well combined.

Add a splash of warm milk.

Whisk the milk firmly into the egg mixture.

Then add the egg mixture to the milk in the pan.

Bring the milk to the boil, stirring constantly.

Squeeze out the gelatin and add it to the pan

Stir in the gelatine and let the pudding warm through over low heat, just below the boil, for a few minutes, the pudding should NOT cook!.

Then remove the pudding from the heat, set it aside and let it cool slightly (Now you optionally stir in the liqueur)
 

Whip the cream. 

Until it reaches yogurt thickness.

Add it to the pudding.

And stir it in with the whisk.

Pour the water out of the pudding mould 

Cut the lady fingers to size.

Place them around in the pudding mould.

Pour the pudding gently into the mould.

Place a heavy plate on top of the mould to keep the lady fingers down and place the mould in the fridge for minimnal 2 hours

Meanwhile whip the 250 ml cream with 2 tablespoons caster sugar until stiff peaks appear and place it in the fridge as well

Tap the pudding out of the mould onto a serving platter., grate chocolate.

Pipe whipped cream around the Diplomat pudding, decorate with cherries.

Our little ones are helping to decorate the pudding with cherries and chocolate and they make it look beautiful!
