Shopping list for marinade
50ml soy sauce
50ml mirin
2 tablespoons rice vinegar
1 tablespoon light brown sugar
1 clove garlic, grated
2.5cm fresh ginger, peeled, grated
1 teaspoon cornflour
Chicken skewers
vegetable oil, for frying
3 organic chicken thighs, skinless and boneless
Serve the chicken skewers with
tater tots, peas and/or peanut sauce
Yesterday we put a recipe for Tater Tots online, small American potato croquettes from the deep fryer. We made chicken skewers with them and the monsters wanted peas, not lettuce! :)) Today our recipe for mini chicken skewers goes online, they were very tasty! How to make mini chicken skewers
First you make the marinade sauce
Put the soy sauce, mirin and rice vinegar into a saucepan.
Stir in de soft brown sugar and bringthe mixture to the boil
Peel the fresh ginger and grate it finely.
Stir the grated ginger into the marinade.
Also stir in the grated garlic.
Finally add the corn flour.
Stir it in and bring back to the boil.
Let the mixture simmer for 8-10 minutes, until it has thickened
Allow to cool a moment.
Meanwhile cut the chicken.
Stir the chicken into the sauce.
Warm the peas.
How to grill the chicken skewers
Lace the chiken on the skewers.
Heat the griddle with some oil.
Grill the skewers until they are brown on 1 side.
Brush the skewers with the marinade sauce and flip them, keep repeating this a couple of times
Brush, turn, press and cook until the chicken is well done.
Serve with Tater Tots and Peas or like above, with peanut sauce.
